Let’s be honest…
Sometimes you just need something sweet and it can make it a struggle to stay on track without completely getting derailed. Today I decided to make a cleaned-up version of my fav candy Reese’s Peanut Butter Cups! Not only do they satisfy your craving but they fill you up because I used a superfood blend (so a sneak way to get some extra nutrients in)
Total Time: 40 minutes Prep Time: 5 minutes
Freeze Time: 35 minutes Yields: 4-5 servings
Ingredients:
1 scoop chocolate vegan superfoods
1 Tbsp coconut oil (melted)
2 tsp peanut butter (I personally love peanut butter so I used 4 tsps melted)
- Mix the melted coconut oil with the superfood powder. If it is too thick, add a little more melted coconut oil.
- Place a paper liner In a muffin tin or spray the pan.
- Cover the bottom with a thin coat of the chocolate mixture.
- Place pan in freezer for 5 minutes
- Remove from the freezer and spoon a thin layer of melted peanut butter on top of the hardened chocolate.
- Cover the peanut butter with the remaining chocolate mixture.
- Place the pan in the freezer for 30 minutes.
- Remove the paper liners if you used them and ENJOY!
