How to make a veggie stir fry

Stir fry veggie bowl add personal protein of choice if you desire 🙂

Earlier this year, I did a 3 week nutritional detox called The Ultimate Reset that taught me a lot about my body and how simple eating cleaner can be. One of my favorite recipes during the reset was a simple stir fry that I personally have now modified and still utilize.

Ingredients:

1/2 cup couscous

1 Tbsp. extra-virgin coconut oil

2 cloves garlic, chopped

1/2 medium carrot, cut into thin diagonal slices

1/2 cup broccoli florets

1/4 medium red bell pepper, sliced

1/4 zucchini cut into thin diagonal slices

1 Tbsp. Bragg Liquid Aminos

Optional: chicken or shrimp depending on your personal protein choice

Instructions:

  1. Heat coconut oil in large skillet over high heat.

2. Start couscous in a separate pan (monitor so you don’t burn it…lesson learned lol)

3. Add garlic and carrot; cook, stirring constantly for 1 minute.

4. Add broccoli and zucchini; cook, stirring frequently, for 4 to 5 minutes.

5. Add bell pepper and reduce heat to medium.

6. Cook 2 to 3 minutes or until tender-crisp. Turn off heat. Add Bragg’s Liquid Aminos. Mix well and ENJOY

Bonus addition: I personally added chicken now that I am eating animal based protein again in limited quantities. I took boneless skinless chicken breasts in a pan in the oven baked at 350 degrees for 25-30 minutes monitoring the temperature to make sure it was properly cooked and then topped the stir fry veggie bowl with chicken.
